JOB PURPOSE

As a member of the Catering and Housekeeping team, you will provide a high-quality food standard, along with first-class service, and demonstrate a passion for food. You will be a member of the team who contributes to the provision of a quality service to meet standards in line with agreed procedures and provide a warm welcome to all customers and visitors, so that the reputation of Sport Wales National Centre’s Catering and Housekeeping function is maintained and enhanced.

MAIN DUTIES

  • To prepare, produce and display all dishes in line with approved menus, and in accordance with the Sport Wales Food Safety Management System (FSMS), ensure a four weekly menu cycle is in place that reflects Sports Wales Food Policy, with all recipes in place costed to ensure compliance with the annual budget.
  • To undertake kitchen administration duties, including all aspects of stock management, ordering and receiving goods in the Head Chefs absence, and ensure all suppliers used are in line with agreed nominated suppliers listing for Sport Wales.
  • To adhere to all menus as and when requested, incorporating (where commercially viable) fresh, local, ethical and seasonal produce. As part of the production team work with in-house nutritionists to ensure the needs of all customers, including elite athletes, are considered.
  • Maintain awareness of current food trends and food industry advances, to enable Sport Wales to develop the food service offer into a market leader.
  • Promote a welcoming environment with a high level of Customer Care and support all staff to achieve the same standard, ensure that all Mystery Shopper visits are above 95% compliant.
  • Undertake all Food Delivery, Storage, Preparation and Kitchen Operation tasks as trained, so that high standards of Food Safety and Health and Safety legislation are achieved.
  • Ensure that all purchases are made via our Nominated Suppliers list, and these are managed to ensure compliance with Environmental & sustainability standards within Sport Wales, to reduce our carbon footprint, all purchasing in line with agree budget of cost of goods v gross profit % to ensure compliance with annual budget.
  • Undertake all cleaning duties and in accordance with Sport Wales Food Safety Management System (FSMS), including carrying out food waste, recycling tasks and the safe disposal of catering waste, ensuring food wastage % is controlled in line with the Leanpath Control System.
  • Monitor and ensure all control forms are completed daily in line with Food Safety Management System (FSMS) procedures, complete and sign off forms to ensure 100% compliance.
  • Work as part of the production team and communicate with Catering Operations Supervisor and General Assistants, to ensure wherever food is served, or retail items are sold (including Vending), that it is delivered and presented to a high standard, and kept in a clean, tidy, and safe manner in accordance with Food Safety legislation.
  • In accordance with the provisions of the Health and Safety at Work Act 1974, to take reasonable care of the health and safety of yourself and others who may be affected by your acts or omissions at work. To co-operate with Sport Wales in compliance with its duties under any health and safety provisions
  • To wear the appropriate uniform and maintain a high level of personal hygiene.
  • Comply with any customer service queries e.g., dealing with customer comments or queries/complaints.
  • To help maintain a tidy and hygienic environment in all areas of the Centre (internal and external)
  • Fulfil responsibilities which contribute to delivering an exemplary service for Sport Wales in respect of our statutory duties, including the Well-being of Future Generations (Wales), Equality, Information Security, Risk Management, Safeguarding, Financial Regulation and Health, Safety & Environment.

PERSON SPECIFICATION

Education

Essential

  • Basic numeracy and Literacy skills
  • City & Guilds 706/1 and 706/2 or Level 2 diploma in Professional Cookery (or equivalent)
  • CIEH Food Safety Level 2 (or willingness to work towards)

Desirable

  • NVQ level 3 food preparation cooking

Experience

  • Experience of working as Chef or Sous Chef within a similar role and environment
